Series 100 adapts a thermosiphonic circulation system with pre-infuser and flow variator. The flow variator (adjustable directly from outside the machine body) gives the possibility to modify the brewing temperature in every group with relation to the used coffee blend without changing the temperature in the boiler and therefore the capacity to produce hot water and steam.

Taking what could be seen as a backward technological step in this day and age may seem like a strange choice. But, if that decision was based on the contention that it still delivered the ultimate form of coffee extraction and produced the best espresso, then the story starts to get interesting.
We are talking about the lever machine. They require a lot more muscle power since the barista literally has to “pull the shot” as opposed to the automated elctro-mechanical pumps that have become the norm. But, the lever machine is making a comeback, not only in Italy and other parts of Europe, but also in Australia. And, these are the machines noted for their beautiful design and classic good looks. Segafredo Zanetti has reintroduced one – the La San Marco 85 LEVA machine – and working on the basis that you can’t reinvent the wheel, the technology in the new version is pretty much the same as it was 60 years ago. This is a manual brewing system and the lever is used to push down a piston, providing greater control over the shot. The operator requires more expert training, but fans maintain that the quality of the extraction will be optimal.
For those who have never used one, the water comes directly from the boiler and it has a higher temperature. By pulling down on the LEVA, the water that comes from the boiler fills up the infusion chamber. So, the quantity of water that goes inside depends on the time the barista keeps the LEVA in the lower position. By releasing the LEVA, the volume of water is compressed by a system of springs through the coffee.
